Dia de los Muertos Cookies

 Canela Baking Co. specializes in creating delicious traditional Mexican cookies. These are cookies that many Mexican families grew up eating around the holidays and are not easily available in markets or stores. The only way to enjoy them today is if someone in the family makes them and somehow you find out and pay them a casual visit.

 

Coricos are one of these type of cookies. In a household the grandmother was typically the one to make the Coricos for the family. They were also the only ones that new the recipe or had the patience to hand roll each one and decorate them with their special cut marks on the side that gave them their unique shape and look.

There is a also a corn flavored Corico version that is crumbly and flaky. It is the type of cookie that is associated with the term Corico. The origins of the original Corico or what it means is not known. The corn based circular Corico is perhaps the more popular and beloved of the different styles of Corico. Since they were cheaper to make, there were more to eat and share. If a child ever went outside to play with their friends with a bag of Coricos, they were quickly surrounded by a group  asking to have some. It was never easy, but sharing was required.

The state of Sinaloa is one of the regions that can claim the Corico as its own but Sonora and some other states in Mexico have a history of creating Coricos. Either way, the Corico is a favorite among the children of Mexico and we are happy to introduce this cookie to everyone.
